
Apricot Coconut Slice

Pro Tips
-
Use an electric chopper if you have one for chopping the dried apricots as that is the best way to get them into small, even pieces to distribute nicely through the slice

Ingredients
500g plain biscuits
500g dried apricots
250g butter
160g brown sugar
100g desiccated coconut
1 tin condensed milk
½ cup coconut, extra
How to make it:
Line a rectangular slice tray with baking paper (approximately 18x28cm)
Process biscuits in a food processor until they are fine crumbs and transfer to a large bowl.
Chop the apricots and stir in to the biscuits
Stir in coconut and mix well
In a separate bowl, melt the butter and brown sugar
Add to the biscuit mixture along with the condensed milk and stir until well combined
Spoon into the prepared tray and press down firmly with a spoon
Sprinkle with extra coconut and place into the fridge for several hours
Remove from the fridge and cut into slices
Store in an airtight container in the fridge
