
Cherry Ripe Balls

Make sure your hands are damp when you are rolling the balls, it will stop them from getting so sticky and help the coconut to stick

Adding pink jelly crystals and green coconut gives these balls a festive look making them great for Christmas gifting

You could exchange the green coconut with green jelly crystals

You could exchange the pink jelly crystals for coconut dyed pink, however I find the jelly crystals add a nice flavour

It helps to chop the cherry ripes into smaller pieces before putting them in the food processor

Ingredients
250g plain biscuits
3 cherry ripe bars
1 tbs cocoa
¾ cup desiccated coconut
1 tin condensed milk
100g milk chocolate

Topping
½ cup desiccated coconut
¼ cup desiccated coconut, dyed green
½ cup pink jelly crystals

How to make it:
Process biscuits in a food processor to a fine crumb
Add cocoa and cherry ripes and process again
Transfer to a large bowl and stir through coconut
In a small saucepan, stir condensed milk and chocolate over gentle heat until chocolate has melted and mixture is smooth
Pour over crumb mixture and mix well until thoroughly combined
Combine all topping ingredients in a small bowl
Using damp hands, roll cherry ripe mixture into small balls then roll in topping mixture to coat well

Makes 35 balls
