Protein Balls

The thing I love about these Protein Balls is that not only are they a delicious, bite sized snack but they are different every time I make them. Almost every ingredient is interchangeable with a variety of other ingredients.

Don't feel like peanut butter today? Never mind, just use any other nut butter - almond, cashew, pistachio, etc.

​

Don't have any peanuts? Use another nut. Chopped pecans would be a good choice or pistachio's would also work well and add a bit of colour.

​

Run out of maple syrup? Just use honey instead. I wouldn't go to the extent of using golden syrup, that would make them a bit too sickly sweet.

​

The recipe specifies cranberries and dried apricots (what I used this time) but any dried fruit can be used - blueberries, goldenberries, whatever is your favourite.

​

The other great thing about these protein balls is they are so quick to make. Just mix all the ingredients together and form into balls - you can be done in 20 minutes!

Pro Tips

  • I always use crunchy peanut butter as that is what we have in our house but smooth would work just as well

  • Add a couple of teaspoons of flour (any kind - coconut, wholemeal, etc) if you need to make your batter a bit thicker.

  • You can chill your batter in the fridge for 20 minutes before rolling it into balls to make it less sticky.

Ingredients

2â…“ cups rolled oats

â…“ cup peanuts, chopped

½ cup maple syrup

â…“ cup choc bits (any flavour - milk, dark, white, peanut butter)

¼ cup dried apricots, chopped

¼ cup cranberries

â…” cup peanut butter

1 teasppoon vanilla extract

1 teaspoon cinnamon

2 teaspoons cinnamon, extra

How to make it

In a stand mixer, combine oats, peanuts, choc chips, dried apricots, cranberries and cinnamon

Stir in peanut butter then maple syrup then vanilla

Roll into balls and dust with extra cinnamon

Store in an airtight container in the fridge for up to 6 weeks.
