Brown Sugar and Ginger Snaps

Pro Tips

  • Dip your fork into a glass of water each time before pressing it on to the biscuits to stop it from sticking.

  • These biscuits are also delicious when made with black sugar, available from health food shops.

 

Ingredients

1 cup dark brown sugar, firmly packed

3 teaspoons ground ginger

2 tablespoons glacé ginger, finely chopped

2 cups plain flour

200g butter, chopped

2 eggs

 

How to make it:

Preheat oven to 160oC

Mix sugar, gingers, flour and butter until mixture resembles fine breadcrumbs

Add eggs and mix until dough forms into a ball

Turn dough onto a lightly floured surface and knead gently until smooth. 

Roll rounded teaspoons of mixture into balls and place about 5cm apart on a baking tray.

Flatten balls with a fork.

Bake in the oven for about 25 minutes or until golden

Stand biscuits on trays for 5 minutes before transferring to a wire rack to cool.
