
Brown Sugar and Ginger Snaps

Dip your fork into a glass of water each time before pressing it on to the biscuits to stop it from sticking.

These biscuits are also delicious when made with black sugar, available from health food shops.
Ingredients
1 cup dark brown sugar, firmly packed
3 teaspoons ground ginger
2 tablespoons glacé ginger, finely chopped
2 cups plain flour
200g butter, chopped
2 eggs
How to make it:
Preheat oven to 160oC
Mix sugar, gingers, flour and butter until mixture resembles fine breadcrumbs
Add eggs and mix until dough forms into a ball
Turn dough onto a lightly floured surface and knead gently until smooth.
Roll rounded teaspoons of mixture into balls and place about 5cm apart on a baking tray.
Flatten balls with a fork.
Bake in the oven for about 25 minutes or until golden
Stand biscuits on trays for 5 minutes before transferring to a wire rack to cool.
