
Blackberry & White Chocolate Muffins

Don’t overmix your ingredients but don’t expect this mixture to be lumpy, this is a very smooth muffin mixture.

Any flavour choc chips would work in this recipe – white, milk or dark

You could also use raspberries, strawberries, blueberries or mixed berries in these muffins
Ingredients
2 cups self raising flour
1 cup plain flour
1 tsp bicarb soda
1 cup firmly packed brown sugar
2 eggs
1½ cups milk
¾ cup vegetable oil
1 cup blackberries
½ cup choc chips
1 tsp nutmeg
How to make it:
Preheat oven to 180oC
Grease or line 24 holes of your ¼ cup muffin trays
Sift flours and soda into a large bowl then add brown sugar and nutmeg and mix to combine
In a separate bowl, combine eggs, milk and vegetable oil
Add to the dry ingredients and mix until just combined
Stir in blackberries and choc chips until evenly distributed throughout the mixture
Fill your muffin cups then place in the oven and bake for 18 minutes or until a skewer comes out clean.
