
Honey Corn Bread

Cornbread tends to have quite a dry texture so it helps to serve your loaves with butter

Ingredients
2 cups plain flour
2 cups cornmeal
1⁄4 cup white sugar
2 tbs baking powder
½ teaspoon salt
4 eggs, beaten
2 cups milk
4 tablespoon butter, melted
1⁄4 cup vegetable oil
1⁄2 cup honey
How to make it:
Pre-heat oven to 22oC/425oF. Grease a mini loaf tray or a 900g/2lb (23x13x7cm) loaf tin
Mix dry ingredients in large bowl and form a well in the middle of the mixture
In a separate large mixing bowl, combine egg, milk, melted butter, oil and honey
Pour into the well of dry ingredients and mix well until all combined
Divide batter into the pan, filling the sections ¾ of the way
Bake for 10-12 minutes, or until golden brown.

Makes 24 mini loaves or 1 x full size loaf

Turn loaves out onto a wire rack to cool completely then store in an airtight container
