
Jamaican Banana Fritters

Pro Tips
-
I always use my electric frypan when making fritters as I find I can fit more on to the large square cooking area
-
I use my quarter cup measuring cup to scoop the batter into the pan as I find the fritters then come out fairly evenly sized and a good serving size

Ingredients
3 super ripe bananas
2 eggs, whites separated
1 teaspoon vanilla
½ teaspoon nutmeg
½ teaspoon cinnamon
1 tablespoon molasses
1 tablespoon sugar
2 cups plain flour
¼ cup milk
Pinch of salt
¼ cup oil
¼ cup icing sugar

How to make it:
In a large bowl mash the bananas along with the egg yolk
Add the spices, vanilla, molasses and sugar, combine together
Add the flour mixture and milk alternately
Whisk the egg whites then slowly add them in being careful not to deflate the volume
Coat the base of an electric or stovetop frypan with oil and heat until hot but not smoking
Using a quarter cup measure, spoon batter into frypan and fry fritters in batches. Do not over crowd the pan
Once you see the edge of the fritters start to turn a golden brown colour, flip them over. Turn only once
Once cooked through, remove the fritters and place them on a plate lined with paper towel
Sprinkle with icing sugar and serve warm with peanut butter or nutella

Separate your eggs and set egg whites aside

Add the egg yolk to the mashed banana and mix well

Add spices, vanilla, molasses and sugar and mix well

Add milk and flour alternately



Beat your eggs whites into stiff peaks


Add the eggs whites to the batter

Mix until fully combined

Spoon quarter cupfuls of batter into your preheated frypan

Fry until golden brown on both sides

Drain and serve warm dusted with icing sugar and spread with nutella or peanut butter
