
Banana & Berry Breakfast Muffins

Don’t overmix your ingredients but don’t expect this mixture to be lumpy, this is a very smooth muffin mixture.

I made these as large breakfast muffins but you could make them any size, just adjust your cooking time accordingly

I used an ice cream scoop to fill my muffin cups. The mixture is so smooth it worked beautifully.
Ingredients
2 cups self raising flour
1 cup plain flour
1 teaspoon bicarb soda
1 cup firmly packed brown sugar
2 eggs
1½ cups milk
¾ cup vegetable oil
3 bananas
1 cup mixed berries
½ teaspoon cinnamon
½ teaspoon nutmeg
How to make it:
Preheat oven to 180oC
Grease or line a muffin tray of your choice
Sift flours and soda into a large bowl then add brown sugar, cinnamon and nutmeg and mix to combine
In a separate bowl, combine eggs, milk and vegetable oil
Add to the dry ingredients and mix until just combined
Mash the banana with a fork
Add to the muffin mixture and mix until combined
Gently fold in the berries with a spatula to avoid them falling apart
Fill your muffin cups then place in the oven and bake for 20 minutes or until a skewer comes out clean

Fill your muffin cases with your batter

Once baked, turn your muffins out onto a wire rack to cool before transferring to an airtight container
