Choc Chip & Chia Loaf

Pro Tips

  • I made this in a mini loaf tray and I think these work best as mini loaves. They are perfect lunchbox size for you child's snack time. 

  • If you wanted to make a full size loaf, you would need to increase your cooking time to about 40 minutes

  • I used black chia seeds in my loaves but you could also use white ones

  • To serve, you can cut your mini loaf into small slices and spread with butter

Ingredients

1/2 cup wholemeal self raising flour

1/2 cup self raising flour

2 tablespoons coconut oil, melted

1 cup milk

1 egg

1/2 cup choc chips

2 tablespoons chia seeds

​

How to make it:

Preheat the oven to 180oC

Combine all the ingredients in a large bowl and mix well

Spoon the mixture into a mini loaf tray

Place in the preheated oven and bake for 25 minutes until a skewer inserted comes out clean

Cool in the pan for 5 minutes and then transfer to a wire rack to cool completely then store in an airtight container.

Remove from oven and leave to cool in tray for 10 minutes
