
Spiced Zucchini Loaf

It takes about 1 medium zucchini to yield 2 cups of grated zucchini.

You can see from the pictures that I made this using my mini loaf tray however you can also make it in 2 x 900g/2lb (23x13x7cm) loaf tins. Increase your baking time to 50 minutes to 1 hour until your skewer inserted comes out clean.

Ingredients
2 cups white sugar
1 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
¼ teaspoon ground cloves
1 teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon salt
How to make it:
Preheat oven to 175oC/350oF
Lightly grease your mini loaf trays or 900g/2lb (23x13x7cm) loaf tins
In a large bowl, beat sugar and vegetable oil to blend
Add in eggs, one at a time, then vanilla mixing after each addition
Add in the zucchini and stir to combine
In another large bowl, whisk together flour, cinnamon, nutmeg, cloves, baking soda, baking powder and salt
Stir flour mixture into zucchini mixture in 2 or 3 additions until just combined
Spoon batter evenly into mini loaf pans, filling about 3/4 full
Bake in preheated oven for 35 – 40 minutes or until a skewer inserted comes out clean
Cool loaf pans on wire racks for 10 minutes
Transfer loaves to wire racks to cool completely before storing in airtight container.

Spoon the mixture into a mini loaf tray or loaf tin

Loaves are cooked when your skewer comes out clean

Transfer your loaves to a wire rack to cool before storing in an airtight container
