
Banana & Cranberry Loaf

Place your loaf in the middle of the oven to avoid the top burning before the rest of it is cooked

Depending on your oven, you might want to check your loaf earlier than 1 hour as it may be cooked already
Ingredients
215g self raising flour
½ tsp baking powder
125g brown sugar
2 bananas
â…“ cup dried cranberries
1 orange, juice and zest
2 eggs
150ml vegetable oil
85g icing sugar, approx
How to make it:
Preheat the oven to 180oC/350oF/Gas Mark 4
Grease or line a 900g/2lb (23x13x7cm) loaf tin
Mash bananas with a fork
Zest and juice the orange
Sift flour and baking powder into a large bowl
Mix in sugar, mashed banana and cranberries
In a separate bowl, lightly beat the eggs, add orange juice and oil and stir to combine
Add to the dry ingredients and mix well to combine
Spoon the mixture into the prepared loaf tin and smooth the top
Bake for 1 hour until a skewer inserted comes out clean
Remove from oven and turn onto a wire rack to cool completely
Mix the icing sugar with water until it is fairly runny consistency the drizzle over the top
Sprinkle the orange zest over the top and store in an airtight container in the fridge
Makes 1 x 900g/2lb (23x13x7cm) loaf
