
Strawberry Friands

I had some egg whites to use up after making ice cream so I asked friends if they had any recipe suggestions. One lovely friend suggested friands and not only gave me her recipe but lent me her friand pan so I could try them out. They were so successful, I bought my own friand pan so I could make them whenever I liked. So next time you have egg whites to use up, use Kylie Gosbell's recipe below!

The strawberries can be replaced with any berry

Use a spatula to gently fold in strawberries so they don't get too crushed

Ingredients
125g butter, melted
1 cup almond meal
225g icing sugar
¾ cup self raising flour
5 egg whites
¾ cup strawberries, sliced
6 strawberries, halved

How to make it:
Preheat oven to 180oC
Put almond meal, icing sugar and self raising flour in a bowl and stir to combine
Lightly beat the egg whites
Add eggs and mix in
Add butter and stir until all ingredients are fully combined
Gently fold through strawberries
Spoon mixture into a friand pan until about ¾ full
Push a half strawberry into the top of each friand
Place pan in preheated oven and bake for 16 minutes
Remove from oven and leave to stand in tray for 5 minutes
Transfer to a wire rack to cool then store in an airtight container

Lightly beat the eggs whites

Melt the butter

Slice the strawberries

Gently fold the stawberries into the friand mixture

Prepare a friand pan

Halve the strawberries

Fill the friand pan 3/4 full, press a half strawberry into each one and place in the preheated oven

Once baked remove friands from the oven and let rest in the pan for a few minutes

Transfer to a wire rack to cool before storing in an airtight container
