
Ginger & Almond Slice

I always use uncrystallised ginger because of it's way lower sugar content than crystallised ginger. You can use crystallised ginger if you prefer however it will increase the sugar content of your slice

You can just chop up some raw almonds if you don't have slivered almonds

Ingredients
1¾ cups plain flour
1 cup caster sugar
â…” cup uncrystallised ginger
½ cup slivered almonds
1 egg
185g butter, melted
¼ cup icing sugar
How to make it:
Preheat oven to 180oC/350oF
Line a 26cm x 18cm slice tin with baking paper
Sift flour into a large bowl, add sugar, ginger and almonds and stir to combine.
Stir in egg then stir in butter
Tip mixture into prepared slice pan and press down until tin is full and mixture is fairly flat on top
Place slice in preheated oven and bake for about 35 minutes until golden on top and cooked through
Once baked remove from oven. Leave slice to sit in tin for about 35 minutes then lift onto a wire rack to cook
Dust with icing sugar then cut into pieces and store in an airtight container
Makes approx. 40 pieces depending on how big you cut them
