The first time I made these brownies was only a few months ago for a bake sale and prior to this I had never made brownies before. They were the first thing to sell out in the bake sale and I ended up making 2 more batches which also sold out immediately.
Since then they have become a regular item on my baking agenda and they are a popular after school snack for my kids, especially in winter with a mug of hot chocolate by the fire.
Pro Tips
I always use unsalted butter. If you prefer to use salted butter, leave out the salt.
Using a tin of the specified size will make quite a flat brownie but then I find if I cut them into 5x5cm squares, they are the perfect size to go with your cup of tea
My choc bits don’t look white because on this day, I had run out of white bits so had to use Peanut Butter Choc Bits which are also perfectly acceptable
If you prefer your brownies to have the traditional papery top a lot of brownies have then mix for longer (about 5 minutes) once you have added the eggs and vanilla
