I first found this recipe in the Slow Cooker Central recipe book and have to admit to being quite surprised and bit sceptical. I had only ever used my slow cooker for casseroles and the like and had never considered it before for a sweet dish. However being around Christmas time and end of school year, it was time to make some sweet treats for the teachers so I thought I would give it a go and I decided on Honeycomb Fudge. It was so easy and so successful (everyone loved it) that I have been making it regularly ever since.

Every time I am going to a friends for dinner or a catch up or to a function where I need to bring a plate, I will take a tray of fudge with me. One friend now checks in with me before I catch up with her to say "Now you are going to bring some fudge with you, aren't you?!". I have also given my kids some to take to school with them when they are having a party and it is always a winner with that plate being the first to go!

To make the fudge, you start with the basic fudge recipe and then at the end stir in whatever confectionary you feel like before pouring it into a slice tin.

Popular flavours in my house are Honeycomb (add chopped up choc honeycomb pieces), Rocky Road (add marshmallows, red frogs, nuts & coconut), Nerds (add a large box of nerds), and Clinkers (add a bag of Clinkers).

I always like to decorate the top of the fudge depending on the occasion. For fudge that's going to school, I like to put confectionary letters on it, for fudge for a birthday, use sprinkles or coloured sugar in the person's favourite colour, when making Nerds fudge, save a bit from the box to sprinkle on top, for Choc Honeycomb Fudge, smash up a few pieces to sprinkle over the top

Pro Tips:

  • The length of time it will take for your fudge to be ready will depend on your slow cooker so just keep an eye on it and stir every 10 minutes or so to see if it's ready

  • Never put the lid on when cooking fudge - the condensation will drip onto your chocolate and it will seize

  • Some people insist that you need to use good quality chocolate however I have always used Home Brand Cooking Chocolate for my fudge and it's turned out perfectly delicious

  • Wait until you are ready to pour your fudge into your tin before adding your desired extra's - anything like marshmallow or chocolate will melt as soon as you add it to your mixture so keep that time as short as possible

  • Use a spatula to gently push your desired decoration for the top into the fudge so it stays in when you cut it up
